I can remember a time in my life when my daily hydration was juice, lattes, and at night?… cocktails. I rarely drank the amount of water I do now. I was young, active and never once thought about how much sugar I was consuming. I blindly drank beverages that were probably equivalent to a Snickers bar.
I rarely drink alcohol anymore.. they trigger migraines, I have kids to take care of, or I’m getting up at dark o clock the next day to run, so it’s just not practical. I am however kind of obsessed with cold drinks, especially in the summer.
Having a simple syrup to sweeten Iced Tea, Lattes, and Mocktails is a key component to fulfilling my cold drink obsession, but when you are drinking a few beverages a day, there is no way I can use the traditional. This 2 ingredient recipe is so quick and easy and you can make it ahead and store it in the frig for up to two weeks. It’s the perfect sugar free, low carb alternative to simple syrup. It’s so “simple” that I’m almost embarrassed to post about it, but I use it a lot of recipes and I think you will too. Since I’ll be using this in some upcoming posts, I thought I’d tell you about it.
What You’ll Need
1/2 cup of Erythritol or for reduced sugar version use Truvia Baking Blend
1 cup of water
How To Make It
In a small sauce pan, over medium heat put the Erythritol and water. Bring ingredients to a boil and simmer for about 5 minutes or until Erythritol is dissolved completely and syrup has thicken slightly (it will still be a watery consistency- just thicker than water)
That’s it! It’s so easy.
