I’m not going to lie, I like and appreciate almost all food, but sometimes I crave plain, basic, white food. When I make a smoothie, I add chocolate protein powder and Almond Milk with ice. I don’t always add greens, beets, chia, flax, matcha… do you get my drift? Not only do I get sick of greens, my kids really get sick of me serving them meal after meal. Sometimes a nice, plain, plate of pasta with a warm, comforting, rich sauce tastes so good.
It doesn’t have to be complete garbage just because it’s white. I always use organic brown rice pasta from Trader Joe’s ( my kids can’t tell the difference between this and any other pasta) and I’ve been using this Vegan “Alfredo” sauce since they were babies. I started by giving them cauliflower puree and the recipe grew from there. Does it taste just like real Alfredo? Not exactly, but it’s close enough and my family genuinely likes it. I hope yours does, too.
- 1 head of Cauliflower washed , cut and steamed
- 1/4 of Melt or Earth Balance Spread
- 1 small Clove of Garlic
- 1/8 cup of Nutritional Yeast (or Parmesan if you’re not vegan)
- 1/2 cup of Almond Milk (more if you like a thinner consistency)
- Sea Salt
- Pepper
- Pasta of your choice
- After you have steamed your cauliflower, add all ingredients to a food processor and blend until smooth and creamy. Meanwhile, boil pasta per instructions, then drain. Pour sauce over warm pasta and serve immediately. The sauce can be frozen and stored for up to one month.
