Looking for a fresh clean, gluten free, dairy free, vegan side dish, you can make in 10 minutes? Look no further. This crunchy fresh salad takes me less than 10 minutes to make, and if you pair it with tofu or organic chicken, it makes a complete meal. The combination of apples and carrot give this salad a sweet tart flavor… one of my personal favorites.
This has been kid tested in my house and it has received high marks. Most kids like carrots and apples, so it makes a great side dish for a family dinner.
One of the things I’d like to achieve this year is eating veggies with most meals and get my family to do the same.
The next time you’re in the store, pick up a bag of organic shredded carrots and apples. All you need to do is julienne the apples and dump them in a bowl. Toss with the vinaigrette and you’re done. You could add some slivered almond for some protein and nuttiness.
What You’ll Need
One bag of Organic Shredded Carrots
One Granny Smith Green Apple cored and julienned
1/4 cup of Vinaigrette
1/4 cup of slivered Almonds (Optional)
1/4 cup of Raw Unfiltered Apple Cider Vinegar
3/4 cup of Olive or Walnut Oil
2 Tablespoons of Organic Agave or Honey
Salt and Pepper to taste
optional- clove of crushed garlic
Makes extra- can be stored in the frig for up to a week.
