The other day a box of fresh produce arrived on my doorstep. My husband, who is not typically a fantastic gift giver, completely scored when he signed me up for farm fresh, local produce to be delivered twice a month to our door as a Christmas gift. There are so many things I love about this service. It’s so convenient, it’s all organic and locally grown, and I love that you receive items you might not regularly buy in the grocery store. My box this week had leeks, mushrooms, heirloom carrots, cabbage, pears, apples, oranges, lemons, and pomegranate.
I opened my box and got to work making a leek soup and this fresh, clean, and crisp slaw. I love that it has Christmas colors with red and green— I’m thinking it will be a great salad to serve at my Holiday party coming up. It’s nice, clean alternative to the many heavy dishes typically served this time of the year. It took less than 30 minutes to put together and we are still noshing on the left overs, which held up beautifully.
This salad has so much crunch and texture. The tart pomegranate and the sweet pears are a perfect balance– the little red jewels pop in your mouth. Bonus, pomegranate is a super food!
Christmas Pomegranate Pear Slaw
For the vinaigrette ( I use this same dressing for many of our salads)
1/4 cup of Walnut or Olive Oil
2 Tablespoons of Lemon Juice or Raw Apple Cider Vinegar
1 Tablespoon of Organic Agave or Honey
Salt and pepper to taste
Add all ingredients to a small bowl, and whisk together.
For The Slaw
1 head of cabbage
1 pear
1/2 of a pomegranate, seeded (1/2 cup of pomegranate seeds)
Slice up one head of cabbage or you can use one bag of pre-shredded. Next julienne or dice one whole pear. Last, seed the pomegranate and toss all the ingredients with the vinaigrette in a large salad bowl.
Side note: You can find fresh pomegranate seeds at Trader Joe’s that are already removed from the fruit. That, and using pre-shredded cabbage, will cut your prep time in half.
