I am a Mexican food junkie. I love tacos, quesadillas, burritos, bowls, and enchiladas. So you know how you put lime, cilantro and avocado on most Mexican food? Why not just make a sauce using all of these ingredients? right? I thought I was being so cool whipping up this batch of sauce, but after I made it, I saw like 200 different recipes on Pinterest <– Check those out too! As it turns out, I use this sauce on everything, not just Mexican. It has the perfect balance of acid, with a creamy texture, along with the peppery cilantro. I love it!
- 1/2 Avocado
- 1 cup Cilantro
- Juice from 2 Limes
- 2 cups of plain Greek Yogurt
- 1/2 t. sea salt
- Place all ingredients in a food processor or blender. Blend until smooth and creamy.
I used the sauce on these tacos. The tacos are whole tortillas with Sweet Potato Dip, sprinkled with a little cheese.
