These bite (or two) sized morsels melt in your mouth.. crunchy, chewy crostini, creamy tangy gorgonzola paired with the sweet of the honey and cranberries. Love these as an appetizer or as a small meal! As always, gluten and wheat free in this house.
Gluten Free Crostini with Gorgonzola, Pecans, Cranberries and Honey
Here is what you will need:
– 6-12 Gluten free Vans mini waffles
– A good quality Gorgonzola Cheese (I used Trader Joe’s)
– Olive Oil or Walnut oil
– Dried Cranberries and Pecans ( I used Trader Joe’s they sell a mix that contains both)
– Honey (Local is best if you have access)
– Sea Salt
Preheat oven to 400 degrees. Line a baking sheet with parchment. Place mini waffles on sheet and brush them with oil.
Bake for about 10 minutes or until golden brown.
Remove from oven and top with crumbled gorgonzola, cranberries and pecans and return to oven for 3 minutes. Remove again and drizzle with Honey.
