I love Kale. I know that for some, it is an acquired taste but I put in everything from smoothies to sandwiches. In addition to loving the taste, it is considered one of nature’s super foods. It is loaded with the antioxidant Vitamins K, C and A and is often referred to as the “queen of greens”. I keep a bag of the pre-washed pre-cut greens in my frig at all times. Every now and then when I feel like the bag is going to get old if I don’t use it, I make this simple side dish that goes well with any protein. Here is what you will need…
One bag of pre-washed pre-cut Kale greens
one can of diced tomatoes (drained) or 1 cup of fresh diced
1 T. Grape Seed Oil
2-3 cloves of minced garlic
juice from one lemon
salt and pepper to taste
Heat olive oil in a large saute pan over medium high heat. Add Kale and tomatoes cook for about 10 minutes or until Kale has cooked down. Continue cooking so that some of the liquid has reduced down.
Add Lemon juice
Continue cooking for 2-3 minutes and then add garlic and saute until fragrant, about 1 minute.
Do not overcook garlic as it can give the dish an off taste. Add Salt and Pepper to taste.
Serve immediately as a side dish… excellent with Chicken, Fish, Beef or Pork or Tofu.
