I am often times thinking about different easy, healthy, and quick recipes that are high in flavor but not loaded with calories. I also like to eat high protein meals and keep the carbs down, unless I am intentionally building my glycogen (carb loading) the week before an endurance race.
This Summer I was digging through my refrigerator and I mixed together this really tasty chicken salad. Now I eat it at least three times a month. The best part is it is very low in carbs but still has some, which most runners need and, even better, it is super fast and easy to assemble. It has the salty flavors of the chicken and nuts mixed with the sweet crunch of the fruit and the sweet and sour dressing. The oil has the “good” Omega 3 Fatty acid. The salad has big flavor and lots of texture…it’s just good.
This salad recipe is so quick and easy and takes only 15 minutes to make. A fresh, cleaning eating idea for a weeknight no bake dinner during the summer. I have taken this to potlucks, parties and served it at baby and bridal showers. It’s one of my most popular healthy recipes.
What You’ll Need
2 cups of Roitisserie Chicken diced
1 cups of Broccoli Slaw
1/2 of a Granny Smith Apple (diced) or 1/2 cup of dried fruit
1/2 cup of Mixed nuts, ( I use Trader Joe’s, shown)
1 stalk of celery minced
For the dressing
2 teaspoons of Walnut or Olive Oil ( I prefer Walnut)
The juice from 2 lemons
1 T. of Agave Syrup
Salt and Pepper
How to make it
Place the Chicken, diced apple, nuts and minced celery in a large salad bowl. Meanwhile mix up your dressing in a separate bowl.
