When I was younger and working and needed “convience” food, I would eat just about anything that would sustain me. After having children and being so conscientious about what I feed them, I really developed a distain for not only junk food, but food that just doesn’t taste very good. Perhaps my tastebuds are aging, or maybe I just pay more attention to flavor. As a very busy parent of three kids under 6 you get very few indulgences so food has become, sad to say, a bit of a reward…I talk more about this in Framing a Masterpiece.
I am always searching for quick, relatively healthy foods for myself and my family. Now that the temperature has dipped down, one of my favorite quick winter comfort lunches is Trader Joe’s Organic Creamy Tomato Soup. It comes in a resealable 32 oz. box, so you can pour as little as a small cup or as much as a big bowl and keep the rest for later. Like pouring milk from a carton.
I add in a small spoonful of Creme Fraiche, and about 3 or 4 of these huge croutons.
And there you have it, the perfect super quick warm winter lunch. It reminds me of a much more flavorful and sophisticated Cambell’s Tomato soup that my Mom used to serve when I was kid (very comforting) all for about 275 calories. If I have had my run in the morning, I always add additional protein like shredded rottisserie chicken or tofu. I could eat it everyday and often times do!
