Not unlike my diary, this blog is scattered with different chunks of of my life rather than one big long steady stream. One thing I am loving is creating recipes and working on improving my photography skills while I am nursing this injury and slowing getting back into running.
The great news is that I’m having fun with my camera and slowing learning. I think my pictures are getting better! Also, I’m really enjoying being in the kitchen and redoing or creating some recipes for my family… bonus, you guys get those recipes, too!
A quirky little side effect of not running and lacking hormones (I don’t feel that old!) is that no matter what I eat, I only stay at my current weight (not that I’m on the scale everyday). I generally like to lean up over the summer months and this is the first year that I’m really struggling to do that. I have always had success with the Arbonne 28 day clean eating detox and I’m doing it right now and the scale isn’t going down fast enough for me.
I’m not all that unhappy about it, it’s not like I need to lose weight, but I would like to FEEL better. No matter what number the scale is, feeling good is my number one priority and clean eating certainly does that for me.
Knowing that I love sweets, the best way for me to stay on track with clean eating is to have clean treats and snacks in my house so when I do feel like having a little something, I don’t go for the junk. That’s where these double chocolate chip cookies come into the picture…
This cookie recipe is Grain Free, Gluten Free and Vegan. I try not to eat more than one at a time, but it’s tough! They are so good. The secret ingredient is the Cream of Tarter. I feel like that gives it a crisp edge and chewy interior. They’re good. Trust me, make them.
What You’ll Need
Almond Meal
Coconut Flour
Almond Flour
Baking Soda
Baking Powder
Cream of Tarter
Vanilla
Unsweetened Cocoa
Enjoy Life Chocolate Chips
Grapeseed Oil
Organic Agave Syrup
- 1/2 cup of Almond Meal
- 1/2 cup of Coconut flour
- 1 1/2 cups of Almond Flour
- 1/2 t. baking soda
- 1/2 t. baking powder
- 1/4 t. cream of tarter
- 1 T. vanilla extract
- 1/2 cup of unsweetened cocoa
- 1/2 cup of Agave
- 1 cup of Enjoy Life Chocolate Chips
- 1 t. salt
- 1 cup of grapeseed oil
- Preheat oven to 350. Mix all dry ingredients together in a large mixing bowl. Add oil, agave, vanilla, and chips. Stir well. Line baking sheets with parchment. Take heaping tablespoons of the batter and form balls. Place on sheets. Press dough balls down a little, then bake for 10- 13 mins.
