Wow- I have really taken a few weeks off from this Blog and and Social Media. Let me tell you, it’s easy to take time off and before you know it, you haven’t blogged in weeks. Oops. I need to get back after it, and I have a few posts in my journal that will come to fruition very soon here, but until then I am going to continue to share what I’ve been cooking in the kitchen. Also, I have been very busy updating old blog posts and doing some well needed house cleaning on this site. It feels great. I’m not one of those people who panics if I take a few weeks off from blogging and I’m definitely not one of those who has 15 stock piled posts that I can use in case of a an absence. I have a family and household to run, and they are my priority. Writing and Social Media take a back seat many times, and I’m good with that, plus taking breaks from time to time is refreshing to my brain.
Summer is generally the time when I try and slim down a bit and remove a few lbs after marathon season. I know, most people slim down during marathon season, but I guess my body just doesn’t tolerate all of the Gu and carbs that is required to run long. Plus, I’m one of those rungry girls who eats like a moose while training and as soon as I stop the miles, I loose my appetite.
I recently read Meb for Mortals and Chapter 5 “Eat like Meb” has got some great advise. In it he basically says that what we eat is a choice not a sacrifice. When you shift your mindset to a positive not a negative, you are more apt to have a healthier relationship with food and I couldn’t agree more.
Everyday we wake up and we make choices and I try and remind myself to balance and to do things that make me feel proud of myself and not the opposite. I enjoy creating and cooking clean and semi clean recipes that my whole family can enjoy, however we all indulge once in awhile as well. If I didn’t ever have a piece of chocolate or something sweet on occasion, I wouldn’t be living. Being overly restrictive leads to failure– at least for me personally.
I love working with Almond Meal and flour. These chocolate chip cookies are and a close second are these delicious sweet and savory grain free, gluten free muffins. This recipe is super easy to make ahead on a Sunday afternoon and we grab one to go during the week for a quick breakfast or lunch.
Here’s what you’ll need
1 cup of Almond Meal
1 cup of Almond Flour
1/2 teaspoon of baking soda
1/4 cup of Arrowroot Powder
1/4 cup of grapeseed oil
1/4 Agave Syrup
1 egg
1/4 cup of ham
1/4 cup of parmesan cheese
1/4 cup of sharp cheddar
1 Tablespoon of an herb mix — I like McCormick Montreal Chicken Seasoning
1/2 teaspoon of salt
- 1 cup of Almond Meal
- 1 cup of Almond
- 1/2 teaspoon of baking soda
- 1/4 cup of Arrowroot Powder
- 1/4 cup of grapeseed oil
- 1/4 Agave Syrup
- 1 egg
- 1/4 cup of ham
- 1/4 cup of parmesan cheese
- 1/4 cup of sharp cheddar
- 1 Tablespoon of an herb mix — I like McCormick Montreal Chicken Seasoning
- 1/2 teaspoon of salt
- Preheat oven to 350
- Mix all ingredients together to form a batter. Line a muffin tin with 8-10 liners. Fill each muffin liner about 3/4 of the way full. Bake for 20-25 minutes. Note- these need to get a little more on the brown side or they might be a little too crumbly.
