This a follow up from my last post Green Eggs and Ham Breakfast bites. I have one “Unknown Character” in my brood. If I don’t keep the food plain and simple, he just won’t eat it.. enough said. So I came up with this as an alternative to Green Eggs and Ham, inspired by the traditional Tater Tot Caserole I ate as a kid.
I used a mini muffin pan — the bite size portion is perfect for my kids, not too big and if they’re still hungry, you can give them more without wasting a huge amount. This was so easy to make! Made it on a Sunday, then slipped them into a zip lock to freeze for the following week (To re-heat: microwave for 30-40 seconds).
For the grown ups, I added diced avocados, a dollop of creme freche, and salsa to the top – after you microwave them. You could also add minced red bell peppers or any veggie to the egg mixture to customize to the taste.
Cheesey Tater Tot Bites
Pre-heat oven to 350
3 eggs
1/4 cup milk
1/4 cup of grated cheese
24 Tator Tots
1/4 cup of crumbled bacon (optional)
salt and pepper to taste
-In a small bowl whisk together eggs, milk and salt (my kids won’t eat pepper, ugh, however, add if you like)
-Spray mini muffin pan with cooking spray
-Place 1 Tator Tot in each cup (I stand mine up)
-Pour egg mixture over making sure not to over fill
-Sprinkle with cheese and bacon (optional)
Bake at 350 for 13-16 min. or until cheese is bubbly and slightly browned. Let cool slightly before removing from muffin pan and enjoy!
